Chia is great for skin health and now it has never tasted better!

Since my last trip to Mexico where they served chia puddings for breakfast, I have been addicted to it. I’ve tried many flavors, but this one is by far my favorite. This recipe is very filling and packed with clean protein nuts and seeds. Chia seeds have lots of dietary fibers, essential fatty acids and minerals such as calcium to keep your gut, your heart and bone health in check. Chia is also great for your skin health! Have a chia pudding a day, your tummy will smile and your skin will glow!!

Ingredients

Topping

  • 1 cup pitted dates

  • 1 cup walnuts

  • 1 pinch of salt

Filling

  • 1 cup raw cashew nuts soaked overnight

  • 1 tbsp unsweetened coconut yogurt

  • 1 large lemon juiced and zested

  • 2 tsp earl grey tea leaves or 2 earl grey tea bag

  • 1 tsp vanilla extract

  • 1/2 cup agave syrup

  • 2 cup coconut milk


  • 1 cup water

  •  1/2 cup chia seeds

Directions

  1. In a small pot, pour coconut milk and 1 cup water in and set the heat to medium.

  2. Pour the leaves in. Let this steep for 5 minutes until the milk turns slightly brown. 

  3. Remove off heat and run tea-milk through a tea strainer to remove the leaves.  Allow this to cool in the fridge for 10 mins.

  4. Add dates, pinch salt to a food processor or high speed blender and blend until small bits remain and it forms into a ball. Remove and set aside.

  5. Next add nuts and process into a meal. Then add dates, back in and blend until a loose dough forms. Set aside.

  6. To make the filling place the soaked cashew (drain the water where It soaked and discard), the tea-milk mixture, lemon juice, zest, vanilla, agave, coconut yogurt into a blender and blend on high for at least 2 minutes or until smooth liquid has formed. Pour into a large mixing bowl and add chia seeds. Mix it well to make sure all chia seeds are evenly distributed

  7. To assemble, divide the crust mixture into 5-6 jars or cups. Use the back of a spoon and gently press the crust evenly in the cups. Pour the liquid mixture on each cup, then place in the refrigerator to chill and set. This should take a few hours.

  8. Decorate with berries and enjoy!
