Gluten Free Fudgy Brownie

Ingredients

  • 1/3 cup of almond flour

  • 2 tablespoons of oatmeal

  • 2 tablespoons of 100% cocoa powder

  • 1 cup of coconut sugar

  • 3 eggs

  • 2 tablespoons of water

  • 1 teaspoon vanilla extract

  • 1 1/4 cup of chopped 70% chocolate

  • 1/2 cup and 2 tablespoons of coconut oil or ghee

Directions

  1. Preheat the oven to 180C.

  2. In a water bath (pan with water, place a glass bowl on top, not letting the bowl touch the water, put the ingredients in the bowl and bring to the fire), melt 1 cup of 70% chocolate with the coconut oil or ghee. Reserve.

  3. In a bowl beat the eggs with coconut sugar for about 5 minutes. Add almond flour, oatmeal, chocolate powder, water and vanilla extract. Stir until well blended. Now add the melted chocolate mixture with coconut oil and finally put the rest of the chopped chocolate.

  4. Pour the dough into a 20x20cm square baking sheet, prepared with parchment paper. With a spatula spread the dough well on the baking sheet filling the corners well.

  5. Bake and bake for 30-40 minutes. When done let cool for 15 minutes.

  6. Remove from the pan with the help of the edges of the baking paper, cut into squares and serve with chocolate ganache or ice cream.
