Easy to Make, Easier to Eat: Gluten Free Chocolate Chip Cookies

Ingredients

  • 1 & 1/2 cup almond flour

  • 1/2 cup of oatmeal

  • 1/2 teaspoon of baking soda

  • 1/4 teaspoon salt 2 tablespoons of coconut oil or butter

  • 1/4 cup of nut butter (almond, cashew or peanut)

  • 1/2 cup of coconut sugar or xylitol

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1/2 cup of chocolate chips

  • Dash of sea salt

Preparation

This recipe has a been a hit with my family and friends during the “stay at home” time because it’s so fast and easy to make.. and it’s even more delicious!

  • Preheat the oven to 180C.

  • Whisk sugar, coconut oil, and nut butter until well combined.

  • Add the egg and vanilla. Continue to whisk.

  • In a separate bowl, mix the almond four, oats, and baking soda.

  • Add the dry ingredient bowl into the liquid ingredient bowl. Mix until well combined.

  • Mix in the chocolate chips with a spatula.

  • With a tablespoon, make the balls and flatten them lightly on the baking sheet prepared with parchment paper or greased with coconut oil.

  • Bake the pan and bake for 12-15 minutes or until lightly browned. The cookies come out of the oven soft and become firm as they cool. Optionally, lightly sprinkle just a dash of sea salt over the top of the cookies.

Watch out for the little cookie monsters! Enjoy!
