Gluten Free Chocolate Chip Cookies
Ingredients
1 & 1/2 cup almond flour
1/2 cup of oatmeal
1/2 teaspoon of baking soda
1/4 teaspoon salt 2 tablespoons of coconut oil or butter
1/4 cup of nut butter (almond, cashew or peanut)
1/2 cup of coconut sugar or xylitol
1 egg
1 teaspoon vanilla extract
1/2 cup of chocolate chips
Dash of sea salt
Preparation
This recipe has a been a hit with my family and friends during the “stay at home” time because it’s so fast and easy to make.. and it’s even more delicious!
Preheat the oven to 180C.
Whisk sugar, coconut oil, and nut butter until well combined.
Add the egg and vanilla. Continue to whisk.
In a separate bowl, mix the almond four, oats, and baking soda.
Add the dry ingredient bowl into the liquid ingredient bowl. Mix until well combined.
Mix in the chocolate chips with a spatula.
With a tablespoon, make the balls and flatten them lightly on the baking sheet prepared with parchment paper or greased with coconut oil.
Bake the pan and bake for 12-15 minutes or until lightly browned. The cookies come out of the oven soft and become firm as they cool. Optionally, lightly sprinkle just a dash of sea salt over the top of the cookies.
