Ayurvedic Ginger Macaroons
Ingredients
3/4 cup almond flour
1/4 cup dry grated coconut without sugar
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup of coconut sugar
2 tablespoons of cocoa nibs
1 egg OR 1 tablespoon flaxseed flour + 3 tablespoons water
1 1/2 tablespoons coconut oil
1/4 teaspoon vanilla extract
1 teaspoon of grated fresh ginger
Preparation
Ginger is a powerful ingredient with numerous benefits to our health. It is anti-inflammatory, an anti-oxidant, and aids digestion. Without further ado: Gingeroons!
Preheat the oven to 190C. Grease a baking sheet with coconut oil.
In a small bowl mix the dry ingredients.
And another bowl beat the egg until aerated. Then add the coconut oil, vanilla and the grated ginger.
Mix the dry and wet ingredients and mix until well combined.
With the help of a tablespoon, make the balls and place them in the pan.
Take it to the oven and bake for 8-10 minutes until it is lightly browned.
Once you remove it from the oven, wait a few minutes to remove it from the pan.
