Ayurvedic Ginger Macaroons

Ingredients

  • 3/4 cup almond flour

  • 1/4 cup dry grated coconut without sugar

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/4 cup of coconut sugar

  • 2 tablespoons of cocoa nibs

  • 1 egg OR 1 tablespoon flaxseed flour + 3 tablespoons water

  • 1 1/2 tablespoons coconut oil

  • 1/4 teaspoon vanilla extract

  • 1 teaspoon of grated fresh ginger

Preparation

Ginger is a powerful ingredient with numerous benefits to our health. It is anti-inflammatory, an anti-oxidant, and aids digestion. Without further ado: Gingeroons!

  • Preheat the oven to 190C. Grease a baking sheet with coconut oil.

  • In a small bowl mix the dry ingredients.

  • And another bowl beat the egg until aerated. Then add the coconut oil, vanilla and the grated ginger.

  • Mix the dry and wet ingredients and mix until well combined.

  • With the help of a tablespoon, make the balls and place them in the pan.

  • Take it to the oven and bake for 8-10 minutes until it is lightly browned.

  • Once you remove it from the oven, wait a few minutes to remove it from the pan.

This yummy snack is paleo and gluten free, inspired by the principles of Ayurveda. Enjoy!!
